Egg-stuffed tomatoes with chargrilled toast


As autumn draws in, I'm still craving the tastes and colours of summer. I get quite down thinking about bright, red juicy tomatoes, drizzled with olive oil and eaten alfresco in the sunshine. And while summer is well and truly behind us now, this weekend I decided to dedicate brunch to the season and bid it farewell, before I start tucking into cheesy mash and meat pies in order to prepare for winter hibernation.

I came up with an Italian take on this Iranian recipe for cheese-baked egg-stuffed tomatoes. Instead of Middle Eastern spices, I chose pesto, topped with extra parmesan for a delicate crunch. Served up with my favourite griddled bread, this was a wonderful light brunch for a Saturday morning.


Recipe - serves two

Take four large tomatoes and using a paring knife or teaspoon scrap out the pulp and keep to one side.



Fry off one shallot in a little olive oil and add 100g of pancetta and fry until crispy. Add the tomato pulp and a tablespoon of pesto. Season and warm through. 


Refill the mixture into the hollowed-out tomatoes leaving space for one egg per tomato.

Crack an egg into a ramekin and gently transfer to the tomato, repeat for the other three - I found I had too much egg so I threw away part of the white until the yolk fit snuggly.



Sprinkle over parmesan, and a grind of black pepper. Bake for 15-20 mins at 190 degrees until the egg has set.

While baking, griddle two or three slices of toast until nicely charred.

Serve with the tomatoes to mop up the tomatoey, eggy goodness.

Breakfast at Mojo's, Anglesey


It seems like practically a lifetime ago since August Bank Holiday weekend, yet it was only a month. September seems to have gone by in a flash.

Anyway, I am enjoying this Autumn sunshine us Brits are experiencing at the moment and it took me back to my long weekend in Anglesey where I jumped in a hire car and played tour guide for a couple of days on the island where I grew up. It was a fantastic weekend of picnics, beaches, Welsh cakes and, of course, lazy brunches. And this creperie, a stone's throw away from Rhosneigr beach on the south-west of the island, is perfect for just that.


Mojo's is usually ram-packed in the height of summer, so we were lucky to get a table next to a couple of relaxed surfers and a handful of families armed buckets and spades.

This cafe is very shabby chic, with mismatched wooden chairs and old Victorian placemats. While you sadly don't have a view of the beach, you can see the chef pop his head out of the open kitchen once in a while, which takes centre stage in the middle of the cafe. Tea comes in giant cups and there is only filter coffee available, but that is just fine, because it makes the place feel even more homely.

After watching a number of crepes being delicately cooked on a hotplate, we pored over the menu with a good variety of flavour combinations. Finally, the two of us decided to go halves on one savoury and one sweet pancake.


I don't think a photo ever does a crepe justice, but hiding beneath a layer of tasty beige skin is an explosion of flavours. We went for the smoked salmon, spinach, fried potatoes and cream - deliciously savoury and perfectly cooked.


For dessert, we decided to switch from French to American and go for the half stack of buttermilk pancakes with maple syrup. As someone commented on my Instagram photo - "That's MY kind of syrup to pancake ratio". And I couldn't have put it better myself.
